Ramblings of a Stay at Home Mom!

I just lost it…

I was coming here to post something and then poof it was gone. But I remember now.

I like to cook, hate to clean it up, but like to cook. I take recipes I see in cookbooks and magazines or on TV and then alter them to fit our style. So tonight we brainstormed on what we should make. I knew my base was going to be Kielbasa. I just had to figure out what to make out of it. Well I know how to make a really good garlic/olive oil pasta so I figured okay I can do that. And add to that the fresh spinach and basil and that should be pretty darn good. Then my mom was like, “Hey add in these tomatoes (deseeded) and some bacon!” And I was, “Good idea!”

Now the process of figuring out how to put it together. I mean the base of it is pretty easy, I’m just a bit worried about the spinach. I’d like to fry it but that will probably make it soggy so I’ll have to add it after the spaghetti is done cooking so that it stays crisp.

Aww man I was going to talk about something else and poof it’s gone. Can’t remember at all now what it was going to be about.

What’s Cooking?

So yesterday I made Cornish Hens for dinner. I think they came out pretty good:

Then this morning I made AppleSauce Muffins for Kaylee because she seemed to love them when she made them at school. They taste pretty good, not too sweet, but they smell great!

What’s for Dinner?

Tonight’s dinner was Chicken, Salad with Ranch Dressing, Garlic Bread, and Cous Cous. Needless to say the Chicken and Salad and bread were good. The rest, not so good.

Writing up the offer…

So tonight we’re writing an offer on a 3 bedroom 2.5 bath, two story 1227 sq. ft. condo in Moorpark. I’m still not exactly keen on living in Moorpark but if we manage to get this condo it will be worth it as a starter home. It requires just paint and carpet on the stairs and upstairs of the unit. Nothing else. Maybe some new appliances even though the appliances look pretty new.

On a side note I went creative on the baking today and after I finished the cookies I got out my fresh Mozzarella and Prosciutto and made a warm wrap of sorts. Kaylee loves them and has had a bunch. I could only handle like one or two. It’s cool that she likes it though.
